Begin heating the pan before making the batter; it should be to temperature when
ou finish mixing. Use a low setting if you are using a gas stove; medium if you
are using an electric stove. Too hot of a pan may result in burning the Æbleskivers.
2 eggs separated
1 package of Ellegaard's Æbleskiver Mix
2 cups buttermilk
2 tsp. butter melted
In
a medium bowl, beat egg whites until stiff, but not dry. In a separate
bowl, beat yolks until pale. Add mix, buttermilk, and melted butter.
Mix at low speed until moistened. Beat at high speed for 2 minutes.
Fold beaten egg whites into batter.
